Is 5KW too much heat for a small van?

For a single-axle van, yes, on full noise. That is why it runs 1-5KW adjustable, and you will spend most winter nights near the bottom of that range with a window cracked. Bigger tourers and canvas campers are where 5KW earns its keep.

How many nights will the 5L tank give me?

A few nights if you idle it low, closer to two hard ones flat out. Fuel burn runs 0.2-0.5L/h, so the setting you choose matters far more than the tank size. Carry a jerry if you are heading somewhere cold and remote.

What has to be sorted before the first burn?

Three things: the exhaust must vent outside and away from windows, the 12V feed needs heavy cable straight to the battery because start-up pulls 15A, and a carbon monoxide alarm goes in the van. Skip any of those and you have a problem, not a heater.
