Can I run this at a caravan park?

On a powered site with the right supply, yes, but 3000 watts is a serious draw from a pedestal that is also feeding your van. Check what the site allows before you plug in, and do not run it alongside the air conditioner and a kettle.

What does a 10 mm plate buy me?

Recovery. A thin plate loses temperature the moment cold steaks land on it and you end up stewing them. Ten millimetres of steel holds enough heat to keep searing through a full load. It also takes longer to come up, so preheat before the first batch.

Is 50 to 300 degrees a useful range?

The low end is the part people underrate. The top of the dial sears, but the bottom is what lets you hold eggs, pancakes and onions steady while the meat finishes off beside them. A plate with one fixed heat is a plate you fight all breakfast.
