Will it work with another brand's monitor?

Treat it as a Sphere-only part. Even where a plug fits, the pin order and the voltage the camera expects vary between brands, and a mismatch gives you a blue screen or a fried camera. If your monitor is not Sphere, look for the matching part for whatever you already run.

How far do the infrared LEDs actually help?

Far enough to see the hitch and the ground immediately behind you, which is what you need when backing in after dark. They will not light up a paddock. Infrared also bounces straight back off rain, dust and a dirty lens, so a wipe before you reverse makes more difference.

Does IP68 mean I can pressure wash it?

Immersion and a jet of water are different tests. A pressure washer aimed at the cable gland will push water past seals that would happily sit under a downpour for years. Wash the van by all means, but keep the wand back from the camera and the connector behind it.
