What does 50x5mm actually describe?

The 5 mm is the thickness of the bar the hook is formed from, and 50 mm is its overall length. The gate opening is narrower again, so measure the eye, ring or webbing you plan to clip onto before you commit to this size.

Can I use it for lifting or recovery?

No load rating is listed for it, so treat it as attachment hardware: awnings, leads, light tie-downs. It is not gear for lifting a load, snatching a bogged vehicle, or anything that would hurt someone if the gate let go at the wrong moment.

Will it still go rusty on the boat?

It resists salt better than the stainless on most hardware-store hooks, but expect brown tea staining where salt dries in the crevices and around the spring. That is surface only. A freshwater rinse after a trip and a wipe with a rag stops pitting taking hold.
