Is 10mm too much hook for camp work?

Mostly, yes. At this gauge you are into mooring lines, chain tails and heavy load restraint, and the hook is stiff enough that it will not spring open on you. For an awning or a shade sail it is dead weight flogging about in the breeze.

Will the 10mm bar fit through my chain or ring?

Check before you buy. A 10 mm bar needs an opening well over 10 mm to pass through and still move freely, and plenty of chain links and tie-down eyes are tighter than they look. Measure the hole, not the gear it is bolted to.

Does the long arm change how it should be loaded?

It does. The extra reach acts as a lever on the bend, so a load pulling sideways works harder to straighten the hook than it would on a short hook. Keep the pull in line with the arm and it behaves itself.
