A pair of grub screws stops the fitting rotating on the tube as well as sliding along it. A lone screw lets the jaw twist around the tube under load, which pulls your bimini leg out of line. Two contact points hold the angle you set.
Not for the screws to hold, but a small dimple in the tube wall makes a big difference. Nipped onto bare round tube the screws can creep; a shallow drilled seat gives each screw something to sit in and the fitting stops wandering on the trailer.
Easily, on thin-wall tube. Wind them up hard and you will dent or split the wall, and a cracked tube is a bigger job than a slipping fitting. Nip them firm, check the joint after a trip or so, and snug them again rather than cranking once.
