Will I get reception at a bush camp?

Only where there is a DVB-T transmitter in range, which usually means towns and the coast. The dual antennas help in marginal and moving reception, but no tuner invents a signal. Out past the last repeater, the recording function is the one that earns its keep.

How much can I actually record to USB?

Up to an 8GB drive, which fills faster than you would expect with broadcast video. Record the one thing you want to watch tonight rather than building a library. Format the drive and test it at home too, because a tuner that will not read your stick makes for a quiet night.

Can it feed screens front and back?

Yes. There are 3 video outputs plus HDMI, so a dash screen and headrest monitors can all run from it. Drawing 5.5W it will not flatten a battery overnight, but it stays powered until something switches it off, so wire it to a switched feed rather than permanent.
