It lets you fix the hinge from behind with a nut instead of putting screw heads through the visible face. Cleaner finish, and nothing for a rope to snag. It also means you need access to the back of the panel, which rules it out on a sealed locker.
Only with something behind it. A stud concentrates all the load on one small area, so thin fibreglass or alloy needs a backing plate or a large penny washer to spread it. Without that, the stud pulls through and leaves a torn hole that is awkward to repair.
Nyloc nut, or two nuts locked against each other. Boats and trailers vibrate constantly and a plain stainless nut on a stainless stud will walk loose given a season. Do not over-tighten as insurance, though, because that is how stainless threads gall and refuse to come apart later.
