Where does a door hinge differ from the butt hinge?

A door hinge is built for a vertical swing carrying weight on the pin all day, so the knuckle and the pin do the work. A butt hinge is usually holding a lid that mostly sits closed. If your panel hangs and swings, pick the door version.

Will it work on a caravan or camper door?

It will, and the corrosion resistance matters more on a van than people expect once you park near the coast or run dusty gravel with salt in the air. Check the door thickness and how the hinge sits when closed, because a marine hinge is a different profile to a caravan one.

Do I need to use stainless screws with it?

Yes, and matching ones. A plated or galvanised screw in a stainless hinge becomes the sacrificial metal, corrodes away in the hole and leaves you with a hinge hanging on one fastener. Mixing metals is the most common way good marine hardware fails early.
