Will these hold an e-bike?

Each mount is rated to 30 kg, which covers most e-bikes and full-suspension rigs. The limit you are more likely to hit is tyre width: anything over 7.5 cm will not seat in the hook, so plus-size and fat-tyre bikes are out. Measure the tyre, not the bike.

Can I screw these into plasterboard?

Not into bare plasterboard. The supplied hardware is made for timber studs or masonry, and a loaded hook puts serious leverage on the wall. Find the studs with a detector and mark them before you drill, or fix a timber batten across the wall and mount into that.

How much wall do I need for four bikes?

Less than you think, but only if you stagger them. Hanging bikes vertically puts handlebars and pedals at the same height, so alternate the mounts high and low and the bars nest past each other. The swivel arm lets you angle each bike away from its neighbour.
