Will it hold my e-bike?

Most e-bikes come in under the 30 kg limit, but pull the battery out before you clamp up. It drops the weight, moves the balance point and keeps the heaviest lump off a clamp that is gripping a seat post. Same goes for panniers and bottles.

What part of the bike should I clamp?

The seat post, every time. The 22 mm to 70 mm jaws will happily close on a frame tube, and the rubber inserts stop scratches, but they will not stop a thin-walled or carbon tube crushing. A dropper post gets clamped on its lower section only.

Is a tripod stable enough on a campsite?

On grass and gravel the rubber feet hold well. The catch is height: wound out to 165 cm with a bike up top, the whole thing is top-heavy and a shove on the bars will walk it. Drop it lower on soft ground and work gently.
