5-inch or 8-inch wheels — which should I take?

8-inch if you will ever cross grass, gravel or soft ground, because bigger wheels roll over what small ones dig into. It also steps up to 100 kg and 150 L. Stay with the 5-inch if you are on sealed park roads and want the lighter 6.6 kg cart.

Will it work on the beach?

Above the tide line, not really. Both wheel sizes are narrow rubber, and narrow wheels sink in dry sand no matter how big they are. On damp sand near the water it tows along fine. For soft sand you want balloon tyres, not this.

Is the 50 kg rating a number I can lean on?

It is a static rating on level ground. Drag 50 kg of firewood over a tree root and the axle sees a lot more than that for a moment. Keep the heavy gear low and sitting over the axle, and pull rather than push on rough ground.
