What does the grip cover actually change?

Wet-hand purchase, mostly. Bare polished stainless gets slippery with spray and fish slime, and it bakes in the sun at a boat ramp. The foam wrap gives you something to hold that isn't hot metal. It also hides the rim, so if you bought this for the polished look, leave it off.

Will it fit my steering shaft?

Check the shaft before ordering. It's built for the standard 3/4 inch tapered shaft used by most recreational cable steering, so pulling the old wheel and confirming a taper with a keyway takes a minute. Hydraulic or splined helms need a different wheel entirely — no adaptor will save you.

Is the spinner knob worth running?

On a single-engine trailer boat, yes — docking in a cross current with one hand on the throttle is exactly what it's for. Some skippers dislike them because a knob can spin back if a wave kicks the rudder. If that bothers you, it unbolts from the rim.
