Why an electric hotplate alongside gas burners?

It earns its keep on powered sites. Run the hotplate on mains and you save gas for when you are off grid, and you get a simmer that does not blow out in wind. Off power it is dead weight, so treat it as a bonus burner rather than the main one.

How deep does the cabinetry need to be?

Deeper than most people allow for. At 543 mm deep and 310 mm tall it needs a proper bay behind the bench face, plus room for the flue path and the gas line. Check the depth against your van wall before anything gets cut.

Is the grill useful or just a marketing line?

It is a genuine griller, and in a van it does the work a toaster and a sandwich press would otherwise do. Expect it to run hot and close to the food, so cheese on toast takes a minute and needs watching. Not the place to slow-cook anything.
