It will tea-stain, and on a coastal mooring it will do it faster. SS304 handles spray and rinsing fine for general rigging, but for a fitting that lives permanently in salt with no fresh water over it, step up to a marine-grade stainless instead.
Because you want mechanical advantage or a change of direction twice over. A double runs a pair of lines through the same block, or doubles back on itself to halve the pull on a halyard. If you only need to redirect a single line, a single sheave is neater.
Treat it as rigging hardware for halyards, sheets and anchor lines, not as a lifting block. No working load is published for it here, and anything over your head or over people needs gear with a rated load stamped on it. Match the fitting to the job.
