
Kamado Joe
The Classic Joe series, the Konnected Joe, the Large Big Green Egg and other round 18-inch charcoal grills. There is a separate stone cut for Big Joe and XL 24-inch grills. Get the size wrong and it either rattles in the rack or will not drop in at all.
Even heat and no flare-ups. Soapstone takes a while to charge but then holds a steady surface with no hot band over the fire, and since fat cannot drip onto coals nothing flares under your fish. The patience it asks for on preheat is the only real trade.
Less than cast iron. It resists stains, takes warm soapy water and a soft brush or a run through the dishwasher, and needs no re-seasoning afterwards. The one rule is letting it cool in the grill first, because hot stone on a table wrecks the table.
