
Kamado Joe
So you can run two surfaces at once. It drops into one side of the Divide and Conquer rack and leaves the other half free for a grate, meaning fish on stone and vegetables over open flame in the same cook, at two different heats. That is the whole idea.
It heats slowly and then stays put. Soapstone soaks up energy and hands it back evenly, so there is no hot band where the fire is strongest and no flare when fat renders, because nothing reaches the coals. The trade is a long preheat before anything goes on.
It is cut for the Big Joe series and other round 24-inch charcoal grills, including the XL Big Green Egg. The Classic-sized stone is a different piece entirely. An 18-inch stone in a 24-inch grill leaves a gap, and the 24-inch will not drop into a smaller one.
