Does the 227kg rating mean my towbar can carry 227kg?

No, and this is where people come unstuck. The carrier is rated to 227kg but your towbar has its own, much lower, download rating for hitch-mounted loads hanging behind the axle. Read the towbar plate first, then work out what bike fits under it.

Will a road bike fit the 195cm platform?

Most trail and enduro bikes sit on 195cm with room to spare. A long-wheelbase road bike or cruiser can overhang the ends, which changes nothing structurally but does put the rear wheel out past the rail. Measure tyre to tyre before committing.

Is the 100cm ramp long enough to load on my own?

Short ramps are steep ramps. 100cm is fine for a light dirt bike you can push and bounce up, hard work for anything with weight in it. Load off a gutter or a bank when you can, and use all 4 tie-down points.
