Make the batter Place 1½ cups of flour + bicarb soda in a mixing bowl. Whisk to combine. Add cold water gradually, stirring continuously to avoid lumps. Whisk until smooth — should be the consistency of thick cream (coats the back of a spoon). Refrigerate for 1 hour. The rest develops the texture + lets the bicarb activate properly. Why bicarb?
