Smoked Cherry Chicken Recipe
Ingredients
1 cup cherry preserves
1 Tbsp butter or margarine, melted
½ tsp grated lemon zest
2 Tbsp fresh lemon juice
1½ tsp ground cinnamon
Pinch salt
Pinch ground cloves
900 to 1.1 kg chicken quarters
Preparation
- Preheat smoker to 115°C.
- In a medium bowl, combine cherry preserves, butter, lemon zest, lemon juice, cinnamon, salt and ground cloves.
- Brush marinade over chicken, reserving some marinade for basting during the cooking process.
- Place chicken in smoker and smoke for 1½ hours, basting halfway through, or until internal temperature reaches 75°C.
