Can I use the sink and the hob at the same time?

Not comfortably. A combined unit puts both in one footprint, so the pot on the burner is right beside the tap and bench space disappears while you cook. That is the trade-off you accept in a van kitchen where a separate sink and hob would not fit at all.

Will it fit the hole my old unit came out of?

Only if the opening matches. The worktop cut-out is 335 x 430mm, so measure your existing hole before you pull anything out. A hole a few millimetres undersize can be trimmed to suit; one that is already too big is a much bigger job to fix.

Is an 11L sink big enough to wash up in?

For camp dishes, yes — it takes a decent stack and you are rarely washing a roasting tray in a van. It will not take a full-size baking dish flat, so if you cook properly on the road expect to wash some things under the tap.
