Softwire plugs together, so there is no hard-wiring at the outlet itself. That does not make 240V van wiring a DIY job. It is licensed electrical work in Australia and your insurer will want the paperwork. Softwire simply shortens the sparky's visit and makes a later swap painless.
Electrically, yes, though the fitting is only as good as the circuit feeding it. Two 10A sockets on one softwire run means a kettle and a toaster together can push a van's supply past what the site lead allows. Stagger the big draws and you will be fine.
One double beats two singles where bench space is tight, but plugs sit close together. Two chunky plug packs side by side will fight for room and one can lift the other loose. If you run wall warts rather than slim plugs, spread them across separate outlets instead.
