Is this a live pressure gauge?

No, and it is not trying to be. The update rate is slow while you are parked and quick once you are rolling, and it jumps to a near-instant report when pressure falls suddenly. Treat it as a leak alarm that happens to show numbers, not a gauge.

Will they suit my valve stems?

Check what your van has before fitting. External sensors add weight to the end of the stem, and old rubber stems can whip at highway speed with something screwed on. Metal stems are the safe answer. Also remember the sensors come off and go back on every time a tyre is changed.

Is 99 PSI enough headroom?

For caravan and light truck tyres, comfortably. Van tyres run nowhere near 99 PSI (680 kPa), so the ceiling is not the thing to worry about. The number that matters more is the low warning you set, because a slow leak is what these are for, and it shows as a falling number you can act on.
