What normally runs on a 5A micro fuse?

The small stuff: instrument lighting, a camera feed, a control circuit for a relay, the sort of thing wired in thin cable. The low rating exists because that thin cable cannot take much. Do not be tempted to move it up when the circuit starts misbehaving.

Why would I need 5 of them?

Because 5A circuits are the ones you keep adding to, a dashcam here, a switch feed there, and each addition is a chance to get it wrong. A pack means you can blow a few while sorting out a new circuit without driving anywhere for more.

Will a 5A fit any micro fuse holder?

If the holder is built for micro blade, yes, because the body is the same across 5A, 10A and 15A and only the rating changes. What will not fit is a mini or standard blade holder. Check the format stamped on the holder rather than eyeballing it.
