Will the rattan hold up in full Australian sun?

The PE wicker is UV-stabilised, which is the difference between weave that greys off in a season and weave that holds its colour. It is not indestructible, so park it under the annexe when you can and hose the dust off, and it will still look right after a few seasons.

What is the drain plug actually for?

Emptying meltwater without lifting a full liner over your head. At the end of the night you pull the plug, let it run out onto the grass and wipe the liner dry. Without one you are tipping several litres of slush somewhere, usually onto your own feet.

Do I need bar stools to use it?

It is built at bar height, so standard outdoor bar chairs line up with it and normal camp chairs sit well below. If your setup is low folding chairs around a fire, this works as a standing drinks station rather than a table you sit at. Plan the seating to match.
