How long will it keep drinks cold?

Long enough for an afternoon, not a weekend. The double-walled bucket slows the melt but there is no power behind it, so it lives or dies on how much ice you put in and whether it sits in the sun. Top it up once and you are set until dark.

Is it stable on soft ground at a campsite?

On packed dirt or grass, yes. The powder-coated steel frame has weight to it. On sand or soft loam the feet will sink unevenly, and a full bucket of ice on top makes that worse. Put a board or a couple of pavers under it and the problem goes away.

Is this a camping item or a backyard item?

Both, though it earns its keep at a caravan annexe or a long stay where you park once and set up properly. It packs down, but assembling a steel frame is not what you want at dusk on an overnighter. For touring light, a soft cooler bag makes more sense.
