Why swap the HDPE shelves for these?

Heat is the main reason. Plastic shelves sit right beside a dome running to searing temperatures, and they mark and sag over the years. Aluminium shrugs that off and the pegs give you somewhere to hang tongs and the ash tool instead of balancing them on the cart.

Will these fit my grill?

Classic Joe Series I and II, Big Joe Series I and II, and the Konnected Joe. Series III grills already run aluminium shelves from the factory, so there is nothing to change. If you are unsure which series you own, the model number on the cart plate settles it.

Do they need looking after?

Hand wash them, and that is about it. Powder coat over aluminium handles weather and salt air without rusting, but grease left to bake on will dull the finish. Fold them down when you cover the grill so the cover sits properly rather than tenting over the shelves.
