Common questions about Hark Wrangler Reverse Flow Offset Smoker
What does reverse flow actually do?
It runs heat under a baffle plate to the far end first, then back across the food, so the end nearest the firebox is not hammered while the other end sits cool. On a plain offset you rotate meat all day. On this one you can largely leave it alone.
Is 68 kg going to travel with me?
Realistically it stays home. It has carry handles and locking latches, but at roughly 68 kg and 1450 mm long it is a two-person lift into a trailer rather than something you load on your own for a weekend. Treat it as a backyard or base-camp smoker.
How much meat fits on it?
The main grate runs 94 by 36 cm, which takes a couple of full briskets or several racks of ribs laid flat, with the warming rack above for anything already finished. The 7.5 mm grate carries that weight without bowing, which thinner grates will not do.
