Spiced Up Chicken Salad Recipe
Ingredients
2 chicken breasts
Bacon – crumbled
⅓ cup green capsicum – diced
2 jalapeños – diced
1 green onion – diced
¼ cup ranch dressing
⅓ cup mayo
Cajun seasoning, salt, and pepper to taste
Preparation
- Preheat smoker to 110°C.
- Season chicken breasts with Cajun seasoning.
- Smoke chicken for about a hour and a half or until the internal temperature reaches 75°C.
- Chop or shred chicken.
- In a bowl, combine the chicken, bacon, peppers, jalapeños and onion.
- Add ranch dressing and mayo to the bowl, mix together until combined.
- Cover bowl with plastic wrap and refrigerate.
- Serve on bread, croissants, or with crackers and enjoy!
